Why I Don’t Skip Breakfast

I find that when I skip breakfast, I run out of steam quickly and end up snacking on something junky before lunch. A hearty breakfast will break your ‘night fast’, fuel your day, and curb unhealthy snack cravings. This is a great (and EASY) recipe to have in your repertoire for busy and hurried mornings. Ingredients for Breakfast Tortillas

Tortilla – use a large burrito-sized tortilla (about 10″ diameter)Bacon – I use 1 1/2 pieces of cooked bacon per tortilla. You can substitute with cooked sausage and if you don’t have time to cook the bacon, use your favorite deli meat. Egg – cook 1 scrambled egg per tortilla. Adding more eggs will make it difficult to close the tortilla.Avocado – you’ll mash half of an avocado with a fork. Avocado adds nice moisture to the tortilla wrap. Cheese – Mozzarella, cheddar, or shredded Mexican cheese all work great. I love a good cheese pull in my breakfast tortilla.

How to Make TikTok Breakfast Tortilla

Pro Tip: Using a great non-stick skillet makes it easy to keep this a one-pan recipe. You can start with cooking the bacon, wipe down the skillet then scramble the egg and use the same skillet to saute the wrap.
