This is a great way to take advantage of cheap strawberries in the summer and a nice way to use strawberries that weren’t as sweet as you hope they would be. These Summer Strawberries and Cream are the perfect snack on a hot day. My mom has made this strawberry blend for years. We loved it with fresh French bread. I’m pretty sure every Ukrainian family makes this. My husbands Mom makes it too. You can use yogurt to make a low-fat version.

Ingredients Summer Strawberries and Cream:

Large pack of strawberries 1/4 cup Sour Cream (to taste) 1 to 2 Tbsp Sugar (to taste). 1 loaf of fresh, store-bought, french bread (optional)

How to make Summer Strawberries and Cream:

  1. Place strawberries in a bowl and give them good rinse.

  2. Cut large strawberries   (if any) in half, than using spriral potato masher, mash them. There still should be chunks of strawberries.

  3. Add approximately 1/4 cup of sourcream or low-fat yogurt and 1-2 tbsp of sugar to your taste.

  4. Mix everything well and serve with some fresh french bread or by itself 🙂

Note: I’m not putting exact amounts of sour cream and sugar because the amount of strawberries will likely always vary. The amount of sugar you use will depend on how sweet or tart your strawberries are. I don’t like this to be sugary sweet. Its nice when it still has some tartness. This blend holds well in the fridge for a couple of days. Most likely it will get eaten long before that.
