Easy Strawberry Spinach Salad
To me, this fresh strawberry spinach salad is the picture of health and it’s so easy to throw together! Spinach, strawberries, tomatoes and red peppers tossed in a simple, homemade, dijon based vinaigrette with hints of bright citrus. Healthy, colorful, flavorful and one of my all time favorite salads!

Ingredient Notes
Salad
Spinach – Fresh, washed. Feel free to replace the spinach with any greens of your choosing! Tomatoes – I used cocktail tomatoes, cut in quarters. Feel free to use your preference. Cherry or grape tomatoes would be great in this salad. Red Bell Pepper – Cut in thin slices. I like red bell peppers the best, but you can use whichever you prefer! Strawberries – Cut in small pieces. Fresh strawberries are essential!
Dressing
Dijon Mustard – Use your preference. The dijon paired with the sweetness of the honey and the zing of the vinegar is the best combination! Red Wine Vinegar – Substitute with your preference of vinegar. Citrus – Lemon and orange juice. Sugar – Substitute honey or agave. Olive Oil – Substitute sunflower, safflower or avocado oil

Leftovers
If you plan on having any leftovers, leave the dressing on the side for everyone to toss with their individual servings. This way your salad won’t get soggy! Your salad can last anywhere between 1-5 days, depending on if you have already dressed the salad or not! Undressed salad will keep for a few days longer (typically 3-5 days) than if the salad already has the dressing incorporated.
