What You Need To Make Mushroom Chicken Bites

There really are only a few ingredients needed to make this besides mushrooms and chicken. Once you get all the ingredients ready, your dinner will be on the dinner table in just 15 minutes!

Oil – I usually use olive or if you prefer use your favorite to cook the chicken in. Chicken – Chicken thighs, boneless and skinless cut into 1 inch cubes. I prefer using chicken thighs because they’re juicier and more tender but chicken breast can be used as well. Salt/pepper – Add salt and pepper to taste. Red pepper flakes – a little bit of dried red pepper flakes add a little touch of heat. Increase the amount if you like more heat. Butter – I like to use unsalted butter to control how salty my dishes are but use whatever you have. Mushrooms – Sliced cremini mushrooms are used, and have a lot of flavor. You can substitute for other mushrooms if you prefer such as white or shiitake mushrooms. Onion powder – a little will adds lots of onion flavor. Garlic – Both garlic powder and minced fresh garlic are added to this dish for lots of garlic flavor. Parsley – Chopped parsley for a little garnish on the dish.

What To Serve With Mushroom Chicken Bites

I love to serve this with mashed potatoes, mashed cauliflower for a complete low carb meal, or plain rice. But if you want to think outside the box, try making burritos with this or even tacos. Other options include a good crusty bread or a nice broccoli salad.

Leftovers

Place any leftovers in an airtight container for up to 3-4 days. It heats up wonderfully either in the microwave or on the stovetop.

Freezer

Once thoroughly cooled, place the chicken and mushroom mixture in an airtight container or, freezer-safe bag and store in the freezer for up to 4 months. When thawed, heat through and serve with your side dish.
