Salmon For Dinner

So I have another sheet pan dinner for you guys, they’re just too darn easy. Plus I’m on a salmon kick lately, so salmon dinner it is. I bought a gorgeous piece of salmon from Costco and couldn’t wait to make it. I loved my firecracker baked salmon so much, I just had to make more salmon again. This time, however, I tried to stick to my all time favorite way to eat salmon, with lots of dill, lemon, honey and garlic. And what a dinner it was.

Dinner All In One Pan

First off, the marinade or sauce, whatever you want to call, is so delicious and it’s made with honey, garlic, lemon, dill, salt and pepper. Mix it all together then pour and spread over the salmon on both sides. I didn’t add this to the veggies here because as this salmon bakes and those juices release in the pan, the zucchini and tomatoes soak up all those yummy juices thus flavoring them.

What Is A Sheet Pan Dinner?

Sheet pan dinners are essentially a one pot meal but for the oven. We’re going to cook our beautiful salmon fillets alongside some plump little cocktail tomatoes and zucchini all on the same sheet pan. It speeds up the cooking process and cuts down on cooking time. I also like this method because it helps with portioning if you’re cooking for one!

Ingredients

Salmon – We’re using an entire fillet today, it’s a bit more pricey but this is a delicious dinner that makes more than enough leftovers! Honey – We want a sweet sticky element to the glaze on our salmon today and we’re getting that with some honey. If you don’t have any on hand feel free to use maple syrup instead. Veggies – Sliced zucchini and cocktail tomatoes, a lot of them. Herbs – Fresh dill chopped up, this is in my opinion an essential ingredient. Seasoning – Salt and pepper. Olive oil – We need a nice neutral base for our salmon sauce, I advise using whatever olive oil you have lying around. Garnish – Lemons sliced up to be lovingly laid over our fillet.

Leftovers

Salmon can be stored for up to 3 days stored in an airtight container in the fridge. You can freeze cooked salmon for 2 – 3 months to ensure freshness. Allow it to thaw completely in the fridge before bringing back up to temperature in the oven.

How To Serve

I like to pair this dish with something carby and fresh – but that’s just me! It’s also perfectly delicious all on it’s own.
