But, to be honest, I still kinda wish that I didn’t know about Pinterest… because it makes me want to buy things I shouldn’t, and it makes me want to bake ridiculous recipes. Like this one. Homemade Samoas Bars! Inspired by the Girl Scout cookie, also known as Caramel Delights. This recipe is WAY more complicated than most of things I make. It actually took me over an hour. (I rarely ever spend more than an hour in my kitchen.) It’s also probably one of the more decadent recipes I’ve ever posted. Definitely not an everyday indulgence, but maybe a fun treat to serve at an Oscar Party this weekend? Or simply for Fat Tuesday? 😉 Thanks a lot, Pinterest. — If you feel like spending more than an hour in YOUR kitchen to make these bars, the recipe is actually pretty simple. I used a few of my go-to recipes to create these layered bars, so I’d be guaranteed a tasty result! Fat Tuesday, indeed. 😉 inspired by Pinterest Cookie Layer: Preheat your oven to 350F. For the base, I whipped-up a batch of Grain-Free Shortbread cookie dough. (Using coconut oil, instead of butter) Press the dough evenly into a parchment-lined 8×8″ glass dish, and bake for 15-18 minutes at 350F, until golden brown. Let cool while you prepare the rest of your layers. — Rather than coating the bottoms of these bars in melted chocolate (like the cookies), I opted for a middle layer of chocolate instead. Melted Chocolate Layer:

3 oz. 70% dark chocolate 1 teaspoon coconut oil 1 tablespoon maple syrup (optional)

Melt all the ingredients together, and stir well. Evenly spread the melted chocolate over the cookie layer, then allow to set while you prepare the final layer. — Coconut Layer: Detox Macaroon batter + 1 Tablespoon Blackstrap Molasses, for a more caramel-like flavor. Mix and spread evenly over the chocolate layer, then return to the oven to bake for an additional 20 minutes at 350F. *Note: For an extra-crispy crust on top, place under the broiler for 1-2 minutes–> but watch closely!! Sugar burns quickly, and smells awful. Not that I would know. Allow the bars to cool for 20 minutes in the pan, then remove using the parchment paper, and allow to cool completely on a cooling rack. Cut into 16 squares, and drizzle with additional melted chocolate, if desired. Totally decadent, but totally worth it.
