These easy monster cookies are such a fun treat! Made with white cake mix and a handful of pantry staples, these colorful cookies will be staring right back at you as you take a bite! I’m a huge fan of cookies because of how many possibilities there are! I wanted to create a colorful, unique bite, that not only tastes delicious, but is SO easy to make! These little monsters check those boxes, plus they’re chewy, moist and adorable. I can’t wait for you to try them!

Ingredient Notes
Butter – Make sure it’s softened – not melted! Cream Cheese – For super creamy and moist cookies and tons of flavor! Cake Mix – I used a box of white cake mix. Food Coloring – Use your favorite colors but these cookies are great with neon food coloring! Powdered Sugar – We are rolling these monster cookies in powdered sugar! Candy Eyeballs – To give our monsters some eyes of course! How else are they going to see us eating them?
How to Make Monster Cookies
Leftovers
Store leftover cookies in an airtight container for 4 days at room temp, or up to 1 week in the fridge.
Freezing
Wait until your monster cookies have completely cooled, then freeze in an airtight container or plastic freezer bag for up to 3 months.
