Meet my new favorite side dish. When it comes to roasted potatoes, I used to love my roasted potatoes with garlic sauce, and trust me I still do, but these cheesy bacon ranch potatoes have inched their way to the top. I mean when you’ve got super cheesy, bacon-y potatoes drizzled with sour cream and sriracha how can they not become a favorite? These potatoes are soft on the inside, crispy on the out and flavored with ranch seasoning mix and tons of herbs. I use lots of dill on these potatoes and if that wasn’t enough, I then loaded these potatoes with cheese, both mozzarella and cheddar. Then comes the bacon and this is where I say, don’t follow the recipe, use as much bacon as you wish.

Ingredients

Potatoes – I used nice Yukon Gold potatoes. Olive oil – We want a nice neutral tasting oil to crisp up our potatoes. Ranch – Dry ranch seasoning adds such an intense flavor bomb to this dish so we’re combining this seasoning with the dressing itself. Herbs – Dried dill, oregano, and thyme. We’re also going to use fresh parsley chopped up as garnish to save for the very end. Seasoning – Ground black pepper, we have enough salt from our other ingredient for this Cheesy Bacon Ranch Potatoes recipe. Bacon – Feel free to get creative with this ingredient, use as much or as little as you like! Cheese – Mozzarella and cheddar for a super cheesy gooey dish! Sauces – Sour cream and sriracha to be drizzled over top, totally optional but completely delicious.

How To Get The Most Out Of Your Potatoes

I decided to pre-boil these potatoes before actually roasting them because this helps cook them evenly and will also help them crisp up quickly. You want to boil them just until they are fork tender, this will create  layer of starch on the exterior surface of the potatoes which will dehydrate as you roast them, thus creating a nice and crispy exterior. That’s the science behind boiling first, but forget science. The important thing to remember here is that these potatoes need to happen in your life. Soon.

You can prepare this dish and store it in the fridge for 3 – 4 days, just save the sauces for drizzling till you’re ready to eat! Be sure to store it in an air tight container till you’re ready to munch!

Freezer

Cooked potatoes freeze excellently! Just store in a shallow air tight container and it should keep for 3 – 4 months. Just pop it out of the freezer and warm in the oven when ready to eat. Save the sauces for drizzling till you’re ready to eat and enjoy!
