I love cauliflower; the texture makes it so versatile making it perfect for soups, salads, sides, etc. It makes a fantastic creamy soup with shrimp by the way. Ingredients for Cauliflower Cucumber and Tomato Salad:

1 Medium Head cauliflower 1/2 English cucumber or 2 small cucumbers (no need to peel, just trim ends) 1 large or 2 medium cloves garlic, pressed 3 Tbsp mayo 3 Tbsp ranch 1 to 1 1/2 cups cherry or grape tomatoes

How to Make Creamy Cauliflower Salad:

  1. Chop cauliflower into small pieces (1/4″ to 1/2″ pieces) and place in a large bowl.

  2. Dice cucumber and add to the bowl.

  3. Cut tomatoes into halves or quarters and toss them into the bowl.

  4. Press your garlic over the veggies.

  5. In a separate bowl, mix together mayo and ranch. Note: if you want your salad to be creamier, you can always add another tbsp of each.  

  6. Stir the dressing into the salad and mix well. Refrigerate until ready to serve. P.S. Refrigerated Leftovers were good the next day after a quick stir.
