Buffalo Chicken French Loaf

With Super Bowl Sunday fast approaching I bet you’re looking for some great appetizers or snacks. Well I’ll be honest, I’m no Super Bowl fan, nor will I be watching it. But that doesn’t stop this gal from enjoying all the good food. Not that I’d need an excuse, but hey I will take advantage of it. I love buffalo anything, and I have a few buffalo chicken recipes on here like my buffalo meatballs, buffalo wings, buffalo chicken quesadillas or potato skins. However, that’s not going to stop me from having more buffalo recipes. Ask me if I have a favorite, and that’s another story. I might be biased here because this is my latest recipe, but I’m going to go out on a limb and say this buffalo chicken french loaf is quite at the top of my list simply because of the buffalo chicken, lots of cheddar cheese plus of course the blue cheese, which you must have with buffalo anything.

How To Make Buffalo Chicken French Loaf

To make this insanely delicious snack, you start which some shredded chicken. Rather than cook my own chicken all the time, I prefer to buy a whole roasted chicken from my local grocery store, use the chicken breast and shred it with 2 forks. This is not as simple as you might think when you have a beagle at your feet looking up at you innocently, knowing exactly what you are doing there. So as usual I have to move fast and get the object of her affection away from her and in the fridge as soon as possible. I love my dog more than anything but now we have to keep her on a low protein diet because of some kidney problems she’s having, so it’s extremely difficult to keep a beagle away from any kind of meat. Back to the subject at hand. To the shredded roasted chicken breasts I added a generous amount of Frank’s Red Buffalo Wing sauce, about 1/2 cup or so. Yes be generous! Oh how I’ve changed when it comes to spicy food. To think that only a few years ago I couldn’t eat anything spicy if my life depended on it. You can either buy a large baguette and cut it in half, or you might be able to find smaller baguettes which is equivalent to half a large one, I can find them at my local grocery store all the time. Cut the baguette in half lengthwise and top each half with the chicken mixture. I had some leftover sharp white cheddar cheese so I used that to make these baguettes nice and cheesy. Place them on a baking sheet and pop them in a preheated oven at 400 F degrees and just bake them long enough for the cheese to melt, about 8 minutes or so. When you take them out and that cheese is nice and bubbly, top them with some crumbled blue cheese, just like that. Then to make them look super pretty and to add a bit more flavor, sprinkle some chopped green onion and parsley all over these baguettes. Cut them into pieces and enjoy. Hubs was in the basement (his man cave/office) when I was making these so I texted him a picture. Needless to say he was upstairs in less than 30 seconds wolfing down these baguettes. Yep, they’re that good!
