I’m continuing my theme of using avocados this week only because I bought a few and had to use them. This is the first time I made avocado chicken salad and it was delicious. It’s so refreshing, it’s almost like something you’d expect to eat on a beach somewhere exotic. Perhaps I exaggerate but a girl can dream. I usually buy a roasted chicken and make all sort of recipes with the meat. It’s so easy and from one chicken sometimes I can get 2 or 3 recipes, well unless the dog is in the kitchen. Most of the time she is, she can smell that chicken a mile away. But I digress. Next time I make this avocado chicken salad I would totally add in some hot sauce, sriracha or Frank’s for a little kick. But you must use the lime juice because it just elevates the flavors to a whole new dimension. Without the lime it would just be a boring sandwich. As you probably know I’m also not a big fan of cilantro, but as I’ve said many times, in some recipes it just works. No ifs or buts about it. This is one of those wonderful recipes that you just must include the cilantro, so if you’re not a fan like me, just trust me and add it in. You’ll love it. As far as the vessel for my avocado chicken salad, I decided to go with yummy croissants. I had bought a big box of croissants at Sobey’s so they were perfect here, but any kind of bread would work just as well. But I love my croissants. All that buttery flaky goodness.
